Ginger & Mint Lemonade

Ginger, lemon and local raw honey support healthy bodies.  The bonus is this drink tastes incredible and is super easy to make.  Ditch the powder lemonade mix from the store.  Your family will let you know when the Ginger & Mint Lemonade is getting low – time to make more.

What you will need:

  • Quart sized Mason jar
  • 1/2 cup chopped fresh mint leaves
  • 1/3 cup sliced fresh ginger
  • 2 cups boiling water
  • 1/3 cup local honey (raw preferred)
  • 1/3 cup fresh lemon juice or organic bottled
  • 1 1/2 cups cold filtered / spring water
  • Ice cubes
  • Fresh mint leaves (optional)
  • Lemon slices (optional)

Veggie Pancakes

Instead of making traditional potato pancakes, take a walk on the wild side.  Create a flavor-packed root vegetable pancake that will blow your socks off. 

What you’ll need:

  • Sweet potato
  • Onion
  • 1 or 2 cloves garlic
  • Beet, red or golden
  • Parsnip
  • Carrot
  • Daikon radish
  • 2 eggs
  • 1 tea. Celtic sea salt
  • 1/4 tea. black pepper
  • 3 tbsp. Eikcorn flour
  • Quality fat like olive oil, butter or lard

Traditional Potato Pancakes

Potato pancakes are so versatile. They can be the main course, served as a side, warmed up just because, eaten sweet or savory. While growing up it was such a treat to have these.  I don’t know how my mother prepared enough to feed the nine of us as we devoured them for dinner.

As an adult, I tried many ways to make potato pancakes. What I found was that if I grated them they would turn an unappealing gray color. Next, I grated them in a bowl of water to keep them from changing color, which afterward I would try to squeeze out the water. Now I find it quicker to shred them in a food processor and drain out any excess liquid.  The result is shorter prep time, so this is a good meal any day of the week.

What you’ll need:

  • Four large golden potatoes, more if small
  • One medium-sized onion
  • Two eggs
  • 1 tea. Celtic sea salt
  • 1/4 tea. black pepper
  • 3 tbsp. Eikcorn flour
  • Quality fat like butter, lard or olive oil

Crock-pot Mac & Cheese

Ingredients:

  • 12oz. to 16oz. box of dried pasta (I use Einkorn pasta)
  • 6 cups of milk
  • 3 cups of grated cheese (I used 1/2 cup of parmesan and the rest sharp cheddar)
  • 1/2 cup flour (I use Einkorn)
  • 1. Tbs. butter
  • 1 tsp. Celtic Sea salt
  • 1 tsp dried minced onion
  • 1/4 tsp. dried mustard
  • 1/4 tsp. paprika
  • 1/4 tsp. granulated garlic
  • 1/4 tsp. oregano
  • 1/4 tsp. thyme
  • Fresh ground pepper to taste
  • Pinch of cayenne pepper

Garlic & Herb Vinaigrette Salad Dressing

Homemade salad dressing is easy to make, affordable and you control the ingredients.

Have you read the labels of most store-bought dressing?  Their ingredients can be downright scary. So let’s do this.

Ingredients:

  • 1/3 cup extra virgin olive oil
  • 1/3 cup red wine vinegar
  • 2 cloves garlic, minced
  • 2 tsp. Dijon mustard
  • 2 tsp. honey
  • 1 tsp. dried oregano
  • 1 tsp. dried parsley
  • 1 tsp. Celtic sea salt
  • 1 tsp. dried onion flakes
  • 1 tsp. mayo
  • 1/2 tsp. freshly ground pepper

Easy Kimchi

Not your traditional Kimchi – but, boy oh boy it’s yummy!

Ingredients:

  • 1 head Napa cabbage, cored and chopped (bite-sized pieces)
  • 1 bunch chopped green onions – 1″ pieces
  • 1 cup grated carrots or skinny matchsticks
  • 1/2 cup grated daikon radish
  • 1 tbsp. grated ginger
  • 3 cloves minced garlic
  • 1/4 cup Korean red pepper powder (increase or decrease to taste)
  • 1 tbsp. Celtic Sea salt
  • Quart size mason jar
