Are you working on staying away from grains/flour and refined sugar? But you want a cookie. Look no further, this recipe is for you.
What you’ll need:
- 1 cup of cashew butter
- 1/4 maple syrup
- Juice of 1 lemon
- pinch of Celtic sea salt
Directions:
- Preheat oven to 350 degrees
- Using a food processor add all ingredients. Process until smooth.
- Cover baking sheet with parchment paper.
- Using two teaspoons scoop a ball of dough with one teaspoon and scrape/drop off with the other.
- Bake cookies for about 12 minutes.
- Cool completely.
- Remove and store in an airtight container. (I prefer using glass)
- By storing in the refrigerator they will last two weeks.
This recipe makes about 2 1/2 dozen cookies.
Make a double batch and freeze some. Pull them out of the freezer, thaw and treat yourself.
These cookies are creaming but delicate. Handle with care.
