What you will need:
- Quart sized Mason jar
- 1/2 cup chopped fresh mint leaves
- 1/3 cup sliced fresh ginger
- 2 cups boiling water
- 1/3 cup local honey (raw preferred)
- 1/3 cup fresh lemon juice or organic bottled
- 1 1/2 cups cold filtered / spring water
- Ice cubes
- Fresh mint leaves (optional)
- Lemon slices (optional)
Directions:
- Add mint leaves and ginger to an empty pot.
- Pour 2 cups of boiling water over mint and ginger.
- Cool for about 15 minutes, while still warm, but not boiling add honey to dissolve.
- Add lemon juice, then allow it to cool to room temperature.
- Strain out the liquid if desired.
- Add additional cold water.
- Serve with ice and optional mint leaves and lemon slices.
